Searing, sizzling, and oh-so-satisfying, a perfectly cooked steak is a culinary delight. But what's the best way to achieve that ideal balance of tenderness, flavour, and texture? With an abundance of cooking methods at our disposal, the choices can seem overwhelming. From the fiery kiss of a grill to the gentle sizzle of a hot stone, each technique imparts its unique touch to your steak. Let's delve into the world of steak cooking and explore the top four methods that can elevate your culinary game.
Why Cooking Method Matters
The method you choose to cook your steak can significantly impact its final flavour and texture. Different techniques influence the way heat interacts with the meat, leading to variations in the Maillard reaction (the browning process) and the degree of tenderness achieved.
Whether you're a seasoned grill master or a kitchen novice, understanding the nuances of each cooking style empowers you to tailor your approach to your preferences and the specific cut of steak you're working with.
#1 Steak Stone/Lava Stone Cooking
Hot stone cooking, a technique that has stood the test of time, involves searing your steak on a preheated stone made of volcanic lava. This method delivers an unparalleled cooking experience, allowing you to customise the doneness of your steak to perfection.
The Advantages of Hot Stone/Lava Stone Cooking
- Customised Cooking: Each diner can cook their steak to their exact liking, ensuring a personalised dining experience.
- Enhanced Flavour Sealing: The intense heat of the stone sears the steak quickly, locking in its natural juices and flavours.
- Interactive Dining: Hot stone cooking adds an element of fun and engagement to your meal, making it a memorable occasion.
- Restaurant Experience at Home: Recreate the upscale dining experience of steakhouses in the comfort of your own home.

#2 Grilling
Perhaps the most iconic way to cook a steak, grilling imparts that irresistible smoky char and caramelised crust. The direct heat of the grill works wonders for thicker cuts of steak, allowing you to achieve a beautiful sear while keeping the interior tender and juicy.
Cast Iron Grilling: While traditional grills are a fantastic option, consider using a cast iron skillet for grilling. Cast iron retains heat exceptionally well, resulting in a restaurant-quality sear. It also adds a subtle iron flavour that many steak enthusiasts find appealing. Our Cast iron pans, skillets and griddle are extremely high quality and can be used in many heat sources from pizza ovens, to open fires. Explore our Cast iron range HERE
#3 Smoking
If you're seeking a more nuanced flavour profile, smoking your steak can unlock a world of rich, smoky goodness. Whether you opt for a charcoal smoker or a wood-fired grill, the slow and low cooking process infuses the meat with complex layers of flavour.
Charcoal BBQ Smoking: Charcoal smokers offer an authentic, wood-fired experience, allowing you to experiment with different types of wood chips for unique flavour combinations.
#4 Broiling
When time is of the essence, broiling is a quick and efficient way to cook your steak. The intense overhead heat quickly sears the exterior, creating a crispy crust while the interior remains tender. This method is particularly well-suited for thinner cuts of steak.
The Hot Stone/Lava Stone Cooking Experience
To unlock the full potential of hot stone cooking, follow these tips:
- Preparing the Stones: Preheat the stones in your oven (Minimum of 280c/536f), on the gas or electric hob or on your grill until they are scorching hot. If using the rocks for restaurant use we provide you with the complete rock oven set up.
- Cooking on Hot Stones: Once the stones are sizzling, sprinkle some sea salt flakes to break the barrier between rock and meat and place your steak on top and let it cook for a few minutes on each side, depending on your desired level of doneness slice bite sized pieces off and sear within second to your liking. Seared to perfection and each mouthful as hot as the last.
- Enhancing the Experience: Serve your steak with your favorite sauces, dips and sides. Experiment with different flavor combinations to discover your perfect pairing.
