Biscotto Clay Stone Setup & Care Instructions
First-Use Burn-In Process:
- Place the Biscotto stone into the baking chamber with the smooth side facing up.
- Heat the oven at half power (approx. 250°C) for 60 minutes, then turn it off and allow it to cool completely.
- Run a second burn-in cycle at full power (509°C) for 60 minutes.
- Note: A small amount of smoke or clay aroma during initial heating is completely normal; simply open a window or door to ventilate.
Cleaning & Maintenance:
- Never use water, soap, or chemical sprays on the clay stone.
- Allow the stone to cool completely, then sweep off flour or charred crumbs with a brass wire pizza brush.
- Handmade Clay Notice: Authentic Italian Biscotto stones are air-dried and kiln-baked in Naples. Natural surface variations, minor edge chips, or color gradients are characteristic of handcrafted clay and do not affect heat performance or durability.
